Sukha Hariyali Chicken- This dish can also be named as Daniya Chicken as daniya /Coriander is very much pre-dominant here !!
1. Chicken with bones (500-600gms)
2. Mastard Oil
8. Coriander (1kg)
9. Salt to taste.
11. Red chilli powder
12. Garam Masala
So the simplest way of cooking this dish is to cook the chicken normally as we usually do and then put the coriander paste in it !!
So first lets make a fine paste of onion, tomato, ginger, garlic, chilli.
Now, after cleaning the chicken we will marinate it with the freshly made paste and add 1/2 table spoon of mastard oil on top of it.
Meanwhile, lets clean and thoroughly wash the coriander leaves and then make a fine paste of it with 8/10 cloves of garlic and 2 green chili.
In a pan we will heat some mustard oil, and put some whole garam masala. Once it starts splattering, put the marinated chicken and then salt and other dry masalas (Turmeric and red chili powder).
Take another pan and put 2/3 table spoon of oil and cook the coriander paste till the water in it disappears.
** Please note : We have to be cautious to add salt to both chicken and the coriander paste while cooking them separate as they will be mixed together later !!
Now once the coriander paste is well cooked the garlic aroma will be prominent. Now once the chicken is cooked and tender, we will put the cooked coriander and will adjust the salt as per taste. Also if it looks too dry we can add in little water and then cook till the coriander paste nicely wraps the chicken pieces.
We can garnish the dish with coriander twigs or chopped green chilies !!
Dish is ready.. Serve it hot with Rice/ Roti/ Paratha !!
